Coming to La Gomera is the equivalent of enjoying a good gofio. A staple food that was inherited from the aboriginal Gomeran people and which, for centuries, was an indispensable base for the Gomeran diet. Gofio is any cereal, root, legume, seed and even fruit, roasted and ground.
Gofio, as a good homemade recipe, can be made with mixtures of various cereals, which in turn gives it different consistencies and nuances of flavor. Once selected and prepared, the bean must be roasted. A concave clay toaster is used in a wood fire on three stones (or chiniques). Inside the container, a black sand base is placed on top of it and cereals are stirred so that they do not burn with a palm or cane stick, lined with cloth at one end. This stick is called a "juercan".
It is this phase that largely defines the quality of the resulting gofio, if it remains raw it will not grind as thin.
The sand is then separated from the grain to remove any remaining impurities and left to cool for one day before grinding. Another factor affecting the quality of gofio is the speed at which it is ground; the slower the better the resulting aroma, taste and texture. Therefore, to get the best results, nothing like the traditional hand mill.
