It is said that there are as many recipes for almogrote as there are homes in La Gomera, and the secret of its taste is that it admits nuances according to the cuisine from which it comes.
Strong, spicy, mild, with an intense cheese flavor or with fruity glimpses... There is no single type of almogrote, but there is one thing you can agree on: they are all delicious!
Of complicated translation (spicy cheese pâté?), almogrote is an exclusively gomera recipe that has conquered homes and restaurants all over the Canary Islands. We don't know what wonderful chef we have to thank for one day deciding to take advantage of the hard goat cheese by slicing and blending it into this wonderful recipe, but it is no wonder that a method emerged to take advantage of every last wedge of a cheese in a simple gomeran home.
